What Is a Smash Kebab?

A smash kebab is seasoned ground beef that is pressed flat and grilled to order, instead of threaded onto a skewer or shaved off a rotating spit. This is Mazal's own preparation, not a traditional dish passed down for generations. We press the beef thin on the grill until the edges crisp, then serve it in warm pita or as a bowl over rice with Turkish salad, baba ghanoush, diced tomato, cucumber, and pickles. It contains breadcrumbs, so neither format is gluten-free. If you are used to a skewered shish kebab or the shaved meat of our shawarma, this is a different technique with its own texture: charred outside, juicy inside.

Kebab and Shawarma Are Not the Same Thing

"Kebab" covers a lot of ground. A classic shish kebab is chunks of meat threaded onto a skewer and grilled over open flame. Shawarma is a completely different technique: whole cuts of meat stacked on a vertical spit, slow-roasted, and shaved off in thin layers as it turns.

Mazal's smash kebab is neither of those. It is seasoned ground beef, pressed flat by hand and grilled to order, so the outside chars while the inside stays juicy. It is our own way of making kebab, not a recipe we are claiming as centuries-old tradition.

Seasoned ground beef is pressed flat on the grill rather than threaded onto a skewer. That gives it a wide, thin shape with more charred surface area.

Mazal's Own Recipe

This is Gal and Tal's take on kebab, built for warm pita and Mediterranean sides. It is not marketed as a traditional Israeli or Turkish dish.

Pita or Bowl

Your choice. The pita comes warm with Turkish salad, baba ghanoush, diced tomato, cucumber, and pickles. The bowl is the same toppings over rice. Neither is gluten-free.
