Shawarma uses layered whole cuts with Middle Eastern spices (cumin, turmeric, cardamom), served with tahini and hummus. Gyro uses molded ground meat with Greek herbs (oregano, marjoram), served with tzatziki. Both cook on a vertical spit, but the preparation and flavor are completely different.
